Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 bay leaf
- 1 cup dried green or brown lentils, rinsed and drained
- 4 cups vegetable broth
- 1 (14.5-ounce) can diced tomatoes
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the onion and sauté until softened and translucent, about 5 minutes.
- Add the garlic, carrots, and celery and sauté for another 5 minutes.
- Add the cumin, paprika, coriander, cinnamon, and cayenne pepper and sauté for another minute until fragrant.
- Add the bay leaf, lentils, vegetable broth, and diced tomatoes and bring to a boil.
- Reduce heat to low, cover, and simmer for about 30 minutes or until the lentils are tender.
- Remove the bay leaf and season with salt and pepper to taste.
- Serve hot, garnished with fresh chopped parsley.
