Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 bay leaf
  • 1 cup dried green or brown lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 (14.5-ounce) can diced tomatoes
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

 

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and sauté until softened and translucent, about 5 minutes.
  3. Add the garlic, carrots, and celery and sauté for another 5 minutes.
  4. Add the cumin, paprika, coriander, cinnamon, and cayenne pepper and sauté for another minute until fragrant.
  5. Add the bay leaf, lentils, vegetable broth, and diced tomatoes and bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 30 minutes or until the lentils are tender.
  7. Remove the bay leaf and season with salt and pepper to taste.
  8. Serve hot, garnished with fresh chopped parsley.
